How to Freeze Fresh Carrots (Best Method for Long-Term Storage)

Freezing is one of the easiest and most effective ways to preserve carrots while maintaining their flavor, color, and nutrients.

1. Harvest and Prepare Carrots

  • Harvest and clean your carrots.
  • Remove the green tops (they draw moisture from the roots).
  • Wash thoroughly and peel if desired.

2. Cut the Carrots

Cut carrots into your preferred size:

  • Slices
  • Diced pieces
  • Sticks

This makes them ready to use later in soups, stews, and side dishes.

3. Blanch the Carrots

Blanching is an important step when freezing carrots to preserve quality.

Bring a large pot of water to a boil and blanch:

  • Sliced or diced carrots: about 2 minutes
  • Small whole carrots: about 5 minutes

4. Cool Quickly

Immediately transfer carrots to ice water for the same amount of time they were blanched. This stops the cooking process and helps maintain texture.
