One of the side dishes my family enjoys in the summer is tomato salad. It is a great way to use up your tomato harvest or take advantage of fresh tomatoes at local farmers markets. It is a great easy and tasty side dish to add to any meal.. Making this in advance is a plus because it gives the salad a chance to marinate and will give you an easy side dish to prep ahead!
This family favorite was never made with exact measurements but I have done my best to recreate it with approximate amounts to help you get started. Feel free to adjust to your taste!
TOMATO SALAD RECIPE
Ingredients
- 4–5 medium tomatoes (or about 4 cups sliced)
- ½ medium onion, thinly sliced
- 2 cloves garlic, minced
- ¼ cup fresh basil, chopped
- ½ teaspoon salt (or to taste)
- 2–3 tablespoons extra virgin olive oil – more to taste
Add all ingredients to a bowl and mix well. Add olive oil to taste – the idea is to make a type of “dressing” with the olive oil and spices. Marinate the tomato salad for at least 2 hours in the fridge for the best flavor. It can even be made the night before!
